Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly oil it.

In a large bowl, combine ground turkey, grated apple, breadcrumbs, egg, sage, parsley, garlic powder, onion powder, salt, pepper, and Parmesan (if using). Mix until just combined — do not overmix.

Roll mixture into 1-inch balls and place on the prepared baking sheet.

Heat olive oil in a skillet over medium-high heat. Sear meatballs for 1-2 minutes per side until golden brown, then transfer back to the baking sheet.

Bake for 12-15 minutes or until cooked through (internal temperature 165°F / 74°C).

Serve warm with cranberry sauce, gravy, or over mashed potatoes. Garnish with extra sage or parsley if desired.
