Arugula Pear with Candied Pecans (Recipe for Printing)

Peppery arugula, sweet pears and crunchy candied pecans tossed in a bright homemade vinaigrette for a perfect seasonal dish.

# What You’ll Need:

→ Salad

01 - 10 ounces (about 10 cups) fresh arugula
02 - 2 ripe pears, thinly sliced
03 - 1/2 to 3/4 cup shaved Gouda cheese (optional)
04 - 1 cup candied pecans

→ Dressing

05 - 1/2 cup extra virgin olive oil
06 - 2 tablespoons white wine vinegar
07 - 3 tablespoons fresh lemon juice
08 - 2 teaspoons Dijon mustard
09 - 1/4 teaspoon garlic powder (or 2 fresh garlic cloves, minced)
10 - 2 tablespoons honey
11 - 1 1/4 teaspoons salt
12 - 1/4 teaspoon freshly ground black pepper

→ Candied Pecans

13 - 1 cup pecan halves
14 - 1/4 cup granulated sugar
15 - 1 tablespoon water
16 - Pinch of salt

# Steps to Prepare:

01 - Place a skillet over medium heat. Combine sugar, water, and a pinch of salt. Stir until the sugar begins to melt, then add pecans. Continue stirring until the mixture becomes glossy and lightly caramelized, about 3-5 minutes.
02 - Spread the candied pecans on parchment or wax paper and allow to cool completely. Leave whole or roughly chop for easier distribution throughout the salad.
03 - In a bowl, whisk together olive oil, white wine vinegar, lemon juice, Dijon mustard, garlic powder, salt, pepper, and honey until smooth and emulsified.
04 - Add arugula to a large serving bowl. Layer with sliced pears and shaved Gouda cheese (if using). Sprinkle generously with candied pecans.
05 - Drizzle with dressing right before serving and toss gently to combine. Serve immediately for optimal freshness and texture.

# Helpful Advice:

01 - For best results, prepare the candied pecans ahead of time so they can cool completely before adding to the salad.
02 - The dressing can be made up to 3 days in advance and stored in an airtight container in the refrigerator.
