Season the chicken with olive oil, salt, pepper, and all dried herbs. Rub in the lemon zest and set aside while preparing the slow cooker.

Add rice, minced garlic, onion, broth, cream, salt, and pepper to the bottom of the slow cooker. Stir gently. Place the seasoned chicken on top of the rice mixture.

Cover and cook on LOW for 5–6 hours or HIGH for 2½–3 hours, until the rice is tender and the chicken is fully cooked. Avoid opening the lid during cooking to keep moisture in.

When cooking is done, remove chicken and stir the rice. Add butter, lemon juice, and fresh herbs directly into the rice. Stir well until creamy. Return the chicken, spoon sauce over the top, and let rest for 5 minutes before serving.
