# What You’ll Need:

→ Chicken and Marinade

01 - 4 boneless, skinless chicken breasts (or thighs)
02 - 2 tbsp olive oil
03 - 1 tsp salt
04 - ½ tsp black pepper
05 - 1 tsp garlic powder
06 - 1 tsp onion powder
07 - 1 tsp dried basil
08 - 1 tsp dried thyme
09 - 1 tsp paprika
10 - Zest of 1 lemon

→ Rice Mixture

11 - 1 ½ cups long-grain white rice, rinsed
12 - 3 cups low-sodium chicken broth
13 - 1 cup heavy cream (or evaporated milk for a lighter version)
14 - 3 cloves garlic, minced
15 - 1 small onion, finely chopped
16 - 1 tsp salt
17 - ½ tsp pepper

→ Lemon Herb Sauce

18 - Juice of 1 large lemon
19 - 2 tbsp butter
20 - 2 tbsp chopped fresh parsley
21 - 1 tbsp chopped dill (optional)

# Steps to Prepare:

01 - Season the chicken with olive oil, salt, pepper, and all dried herbs. Rub in the lemon zest and set aside while preparing the slow cooker.
02 - Add rice, minced garlic, onion, broth, cream, salt, and pepper to the bottom of the slow cooker. Stir gently. Place the seasoned chicken on top of the rice mixture.
03 - Cover and cook on LOW for 5–6 hours or HIGH for 2½–3 hours, until the rice is tender and the chicken is fully cooked. Avoid opening the lid during cooking to keep moisture in.
04 - When cooking is done, remove chicken and stir the rice. Add butter, lemon juice, and fresh herbs directly into the rice. Stir well until creamy. Return the chicken, spoon sauce over the top, and let rest for 5 minutes before serving.
