Pineapple Christmas Balls (Printable Version)

Sweet pineapple and cream cheese treats rolled in coconut that bring tropical flair to your holiday table with minimal effort.

# Ingredients:

→ Base

01 - 1 can pineapple chunks in juice, drained
02 - 200g full-fat cream cheese, softened
03 - 100g powdered sugar

→ Coating

04 - 120g shredded coconut
05 - 75g chopped walnuts or pecans (optional)

# Steps:

01 - Drain canned pineapple chunks thoroughly and pat dry with paper towels to remove excess moisture.
02 - In a large mixing bowl, combine softened cream cheese and powdered sugar until smooth and fluffy.
03 - Gently fold the dried pineapple chunks into the cream cheese mixture until evenly distributed.
04 - Using clean hands or a small scoop, portion the mixture and roll into bite-sized balls approximately 3cm in diameter.
05 - Roll each ball in shredded coconut until fully covered, pressing gently to ensure the coating adheres.
06 - Arrange finished balls on a serving platter and refrigerate for at least one hour to firm up before serving.
07 - Transfer to serving plates and optionally sprinkle with extra coconut or chopped nuts for presentation.

# Notes:

01 - For a fresher flavor, substitute canned pineapple with fresh pineapple chunks, ensuring they are well-drained.
02 - These balls can be prepared up to 3 days in advance and kept refrigerated in an airtight container.
03 - For a festive touch, add a few drops of green or red food coloring to portions of the coconut before coating.
