Add the diced bell pepper, onion and chopped garlic to the bottom of your slow cooker, then place the chicken breasts on top.

In a bowl or glass measuring cup, whisk together the peanut butter, chicken broth, soy sauce, honey, sesame oil, and chili garlic paste until well combined.

Pour the sauce over the chicken, then cover and cook on HIGH for 2-3 hours or on LOW for 4-5 hours until the chicken is tender and cooked through.

Remove the lid, then stir in the lime juice and cilantro. Serve over rice, noodles, or steamed vegetables.
