# Ingredients:

→ For the chicken

01 - 1.5 lb chicken breasts
02 - 1 red bell pepper, diced
03 - 1/2 large yellow onion, diced
04 - 2 garlic cloves, chopped

→ For the sauce

05 - 1/2 cup natural creamy peanut butter
06 - 1/2 cup chicken broth
07 - 1/4 cup soy sauce
08 - 1 tbsp honey
09 - 1 tsp sesame oil
10 - 1 tsp chili garlic paste
11 - 1 tbsp lime juice
12 - 2 tbsp fresh cilantro, chopped

# Steps:

01 - Add the diced bell pepper, onion and chopped garlic to the bottom of your slow cooker, then place the chicken breasts on top.
02 - In a bowl or glass measuring cup, whisk together the peanut butter, chicken broth, soy sauce, honey, sesame oil, and chili garlic paste until well combined.
03 - Pour the sauce over the chicken, then cover and cook on HIGH for 2-3 hours or on LOW for 4-5 hours until the chicken is tender and cooked through.
04 - Remove the lid, then stir in the lime juice and cilantro. Serve over rice, noodles, or steamed vegetables.

# Notes:

01 - Consider searing the chicken in a hot skillet before placing it in the slow cooker for a more complex flavor and texture.
02 - For a creamier sauce, stir in a splash of coconut milk or heavy cream towards the end of cooking.
03 - Natural peanut butter yields the most balanced flavor as it doesn't contain added sugars or preservatives.
04 - To make this dish ahead of time, prepare the vegetables and sauce the night before and store separately in the refrigerator.
