Combine mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey in a small bowl. Whisk thoroughly until well integrated. Adjust flavor by adding more sriracha for extra heat or more honey/sweet chili sauce for sweetness. Refrigerate until serving time.

Heat sesame oil in a large skillet over medium-high heat until glistening. Add ground turkey, breaking it into smaller pieces as it cooks. Once turkey is browned and reaches 165°F internal temperature, reduce heat to medium-low. Add garlic, ginger, smoked paprika, onion powder, soy sauce, sriracha, chicken broth, honey, black pepper, and salt. Stir to combine.

Simmer mixture for 2-3 minutes, stirring occasionally. Sprinkle cornstarch evenly over the mixture and stir well to incorporate. Optional: stir in 2 tablespoons of prepared bang bang sauce for added flavor just before serving.

Layer cooked rice as the base in each serving bowl. Arrange desired vegetables and toppings around the bowl. Spoon seasoned ground turkey mixture in the center. Drizzle generously with bang bang sauce. Garnish with sliced green onions and sesame seeds.
