Winter Citrus Pomegranate Salad (Printable Version)

A vibrant mix of oranges, pomegranate, feta and candied pecans in homemade dressing - the perfect holiday side dish.

# Ingredients:

→ For the Salad

01 - 7 cups mixed spring greens
02 - 1 1/4 cups orange segments (mandarins, clementines or tangerines)
03 - 1/2 cup pomegranate seeds
04 - 1/2 cup feta cheese, crumbled
05 - 1/2 cup candied pecans, roughly chopped

→ For the Dressing

06 - 1/3 cup olive oil
07 - 1 tablespoon honey
08 - 2 teaspoons Dijon mustard
09 - 2 tablespoons apple cider vinegar
10 - 1 tablespoon minced shallot
11 - Salt and pepper to taste

# Steps:

01 - Place the mixed greens, oranges, pomegranate seeds, feta cheese and pecans in a large bowl.
02 - Place all the dressing ingredients in a small bowl, whisk until smooth.
03 - Drizzle the dressing over the salad mixture to taste, then gently toss to coat. You may have dressing left over. Serve immediately.

# Notes:

01 - Pre-crumbled feta often contains anti-caking agents; using a block of feta and crumbling it yourself yields better flavor.
02 - For convenience, use pre-washed greens and store-bought pomegranate seeds.
03 - Dressing can be prepared up to 3 days in advance and stored in an airtight container in the refrigerator.
04 - Oranges and pomegranate seeds can be prepped up to one day ahead of serving.
