Beef Manhattan Slow Cooker (Printable Version)

Juicy slow-cooked beef layered over mashed potatoes and toast, smothered in silky gravy for a nostalgic American comfort classic.

# Ingredients:

01 - 2 pounds beef roast (chuck or round)
02 - 1 medium onion, sliced
03 - 2 cups beef broth
04 - 2 tablespoons Worcestershire sauce
05 - 1 tablespoon soy sauce
06 - 1 teaspoon garlic powder
07 - 1 teaspoon onion powder
08 - 1 teaspoon dried thyme
09 - 1 teaspoon black pepper
10 - 1/2 teaspoon salt
11 - 2 tablespoons cornstarch + 2 tablespoons cold water (for slurry)

→ For Serving

12 - 6 slices of bread (white or Texas toast style)
13 - 4 cups mashed potatoes (homemade or prepared)

# Steps:

01 - Place the sliced onion in the bottom of your slow cooker.
02 - Lay the beef roast on top of the onions.
03 - Pour in the beef broth, Worcestershire sauce, and soy sauce.
04 - Sprinkle garlic powder, onion powder, thyme, black pepper, and salt over the beef.
05 - Cover and cook on LOW for 8 hours or HIGH for 4–5 hours, until the beef is tender and easy to shred.
06 - Remove beef from the slow cooker and shred with two forks.
07 - Strain out onions and return broth to the pot. Stir in a cornstarch slurry (2 tbsp cornstarch mixed with 2 tbsp water) to thicken into a gravy.
08 - Place a slice of bread on a plate, top with mashed potatoes, add shredded beef, and ladle gravy generously over the top.

# Notes:

01 - This classic Midwestern comfort dish has its roots in diners across Indiana and Ohio, not Manhattan, New York as the name might suggest.
02 - For a more nutritious version, use whole-grain bread and leave some potato skins in the mashed potatoes for added fiber.
03 - The slow cooking method allows even tough cuts of beef to become fork-tender while absorbing all the savory flavors.
